Caramel Fleur de Sel
Make that
homemade
salted caramel.
Cool down the cooked caramel to 40˚C.
Add well-chilled butter cubes.
Emulsify until you've transitioned from warm amber to pale cream.
Enjoy it as a macaron filling.
Or as a brownie variety.
