Caramel Fleur de Sel


Make that homemade salted caramel.




Cool down the cooked caramel to 40˚C.


 


Add well-chilled butter cubes.




Emulsify until you've transitioned from warm amber to pale cream.




Enjoy it as a macaron filling.




Or as a brownie variety.

Pickled Mango

When mangoes become in season all year round.

Inspired by (Elisa's) Mommy Vicky's homemade chili-infused pickled mango
(also known as 'Burong Mangga' according to Elisa)
that I brought back with me from the Philippines last month. 
Nothing beats homemade gifts -- especially from Mommykin's kitchen.
SO ADDICTING.


Homemade Pickled Mango


I chose the sturdier rosemary for my herb-infused variety.


Li Hing Mui (dried plum) Mango as commonly seen at any local stores in Hawaii.
